Two nights before the end of school, Matt woke up yelling for me about an hour after he’d gone to bed. As per usual, I sprinted up to his room.
‘Mom! I need to do my birthday with my class and you can make cookies for me to take in!’
{me, staring at his like he’d sprouted another head} ‘Uh, okaaayy. But your birthday is in August…’
‘But we can celebrate it in school this week!!’
{me, backing away slowly} ‘Alright, I’ll talk to your teacher tomorrow’ and thinking dude, you seriously woke up to tell me that 2 days before the end of school?!
Come to find out, yes, they do encourage the kids to celebrate their birthdays with the class when it falls during non-school months. So, since Matt wanted to take cookies, cookies I would bake!
My original thought was a plate of cookies. Then I thought, why not individual bags. Then I thought, man, that’s boring!! For some reason my mind went to those little cookie cups they sell at the cookie place at the mall – you know, cookies filled with frosting or chocolate? Why not try to make those?!

Triple Threat…(aka the Turducken of the Dessert World)
Thanks to those lovely peeps over at Eat, Drink and Blog, I was introduced to Cake Spy and this fabulous dessert concept: Cookie + Cake + Pie – in one dish. {droooool}
It just so happened that we have a family bbq to go to today and my designated dish is dessert.

Being slightly short on time, I decided to cheat a little bit and use pre-made cookie dough and pie crusts. And being a little crazy, I decided to make two different kinds: Chocolate Chip Funfetti and Sugar Chocolatey Goodness.
The recipe is super easy – (1) batch cookie dough, (1) pie crust, (1) batch cake batter and enough frosting to frost a cake.
I’m using aluminum pie pans so I don’tt have to worry about losing getting my pie pans back. It took me no time at all to put these together and pop them in the oven. After 25 mins, I thought they seemed a bit liquidy inside, so I set my timer for 5 more minutes. After that, I still wasn’t sure, so 5 minutes more (x3). They browned up quite nicely …

Today I had a doctor’s appointment with my PCP. Dr. C is pretty cool. He’s quick with a joke and a smile, friendly and generally seems to know what he’s talking about. And he’s big on notes…if you go in for a flu shot, you’ll leave with one of his very neatly written notes on what happened during the visit and what should happen after. No excuses that you didn’t remember; he’s got you covered.
My blood pressure today? High again. I told him about trying to give blood and that my bp was 140/110 that night. He was mildly concerned and we discussed ways to get it a bit lower. First, I’m to continue with the exercising….that’s his big thing – fitness, not weight. His theory is if I’m exercising, the weight will naturally come off – he wants slow and steady. Of course, watching what I eat (though he made me promise not to stress out about it or that would have an adverse affect on my bp!). He started to tell me to reduce my …
